The « Provence » appellation has built its reputation on the excellence of its terroir.
First of all, because of its complex geology, one calcareous and the other crystalline,
the vine's
roots are impregnated with the particularity of these poor and well-drained soils.
Moreover,
from a climatic point of view, this vineyard benefits from an exceptional amount
of sunshine accompanied
by the Mistral, a dry wind that protects the plant from diseases
linked to humidity.
The combination of these climatic and geological characteristics gives
rise
to healthy and aromatic grapes, ready to be harvested by our teams.
Costeval has a pale pink colour. Its delicate nose reveals aromas of red fruits as well as elegant floral notes. Its frank and aromatic mouth offers a beautiful freshness, combining roundness, vivacity and minerality.
For the elaboration of this wine, the grapes are harvested in a cool night at what we consider to be the ideal balance between sweetness and acidity. Then, they are cold-pressed directly. Only the first free-run juice is selected at the end of the press to preserve clear and limpid colours. After all they are cold-settled and fermented at low temperature in stainless steel thanks to preserve the fruity aromas. Finally, the wine is matured on its lees after fermentation, with a few batonnages, to make it more dense and complex.
The ideal drinking temperature for this wine is between 8 and 10°C.
